For low-and-slow, in the smoker or a roasting pan, no cut excels like the Brisket. Our fine, hand-trimmed 7X Wagyu Brisket has the characteristic marbling that makes our bloodline famous, and is hand-trimmed with ¼-inch of flawless and flavorful fat cap. These are graded Prime (in chef parlance, it’s a 120 brisket, Deckle-off, Boneless), and available in two size options: 10 to 12 pounds, and 12 to 14 pounds.
That’s enough to feed an entire family, or convince all the judges where the blue ribbon should hang. It’s a competition-winning cut, no matter where you slice it.
