About the Product
This is the king of cuts, the one you imagine when someone says “Steak.” The T-bone and Porterhouse are both situated along that iconic bone, and each contains both a tenderloin and a strip steak (AKA, New York Strip). The difference is largely one of priorities, with the Porterhouse holding a little bit more of the tenderloin. Each of these two-inch-thick monsters is 32 hand-trimmed ounces, impressively marbled and culinarily ideal.
