Perfect NY Strip Steak with Garlic Herb Butter

There’s nothing better than a perfectly cooked New York strip — crispy edges, a tender, juicy center, and that rich garlic-herb butter melting over the top. Here’s exactly how I make my favorite dish!
Garlic Herb Butter (Prepare Before Cooking)

Enough for one NY strip steak — about 2 tablespoons total
Ingredients
- 2 tbsp salted butter, softened
- 2 garlic cloves, finely minced
- ½ tsp dried parsley
- ¼ tsp dried thyme
- ¼ tsp dried rosemary
- Small pinch of black pepper
- A few drops of fresh lemon juice
Instructions

In a small bowl, combine all ingredients until smooth and well blended. Set aside at room temperature while you prepare your steak — this lets the flavors meld and ensures it melts evenly during basting.
How to Cook the Perfect NY Strip
1. Preheat the Oven
Set your oven to 400°F to preheat while you prepare the steak. This way, it’s ready for the final finishing step.
2. Bring Steak to Room Temperature
Remove your NY strip from the fridge and packaging about 30–45 minutes before cooking. Letting it reach room temperature ensures even cooking and a perfect crust.
3. Season Simply, But Generously
Five minutes before cooking, pat both sides of the steak completely dry with paper towels. Season generously with kosher salt and freshly ground black pepper — the simplest seasoning often brings out the best flavor.
4. Heat the Pan
Use a cast-iron skillet for best results. Set it over medium-high — closer to high — and add 1 teaspoon of avocado oil. When the oil just begins to smoke, it’s hot enough.

5. Sear — and Don’t Move It
Place the steak in the hot pan and leave it untouched for 3½ minutes. Flip and sear the other side for another 3½ minutes. It may sound long, but this is what creates that beautifully crisp, deeply seared crust.
Tip: You’re looking for a deep brown crust, not golden — that darker sear is what gives a NY strip its signature steakhouse flavor. The color comes from the Maillard reaction, a natural browning process between amino acids and sugars that builds rich, complex, savory flavor.
6. Render the Fat Edge
Use tongs to hold the steak upright and sear the fat edge for 15–30 seconds until it’s browned and slightly crisp.
7. Butter-Baste to Perfection
Turn off the burner, tilt the pan slightly, and add your prepared Garlic Herb Butter (leaving a little left for the end). As it melts, spoon the butter repeatedly over the steak for 30 seconds, coating it completely in those aromatic herbs and garlic.
8. Finish in the Oven
Transfer the entire skillet to your preheated 400°F oven and roast for about 4 minutes for medium-rare (adjust slightly for your preferred doneness).
9. Rest and Serve
Move the steak to a plate and let it rest for 7–10 minutes to allow the juices to redistribute.
Just before serving, add an extra scoop of Garlic Herb Butter on top — it’ll slowly melt into the warm steak for that glossy, flavorful finish.
