About the Product
The Zabuton is one of those hidden cuts, carved from the tender underside of the chuck. Ours is tender and delicious, of course, but what sets it apart is the marbling — lacy flecks and whirls of that characteristic Wagyu fat. You may know the Zabuton (which its name from a rectangular Japanese pillow) as the cut that’s thinly sliced and cooked on hot stones at fancy Japanese steakhouses, but it is often trimmed more thickly and served as the Denver steak.
Our Zabuton comes in one 3- to 3.5-pound piece, so you can slice it for whatever dish you have in mind.
